Most modern cast iron leaves the mould rough and stays that way — the pebbled surface you feel under your thumb is a finishing step that got skipped. We machine every cook surface flat, then season it in grapeseed oil until it's slick. That is the difference between a pan that fights you for a year and one that works on day one.
Carbon steel gets the same treatment from the other direction: spun from French sheet, handles hot-forged and riveted rather than spot-welded, so there is no seam to fail.
